Chinese Food - Recipe for Main broth


 
 

Main broth
Products: Meat 1 medium sized chicken bones from chicken or pork (or both), 50 g ginger, 30 ml sherry or brandy, carrots, celery, 1 onion, salt, pepper.
Preparation: All meat products are placed in 2 L of boiling water. Harvest the foam. Add vegetables and alcohol. Broth boil at low heat until cooked products. Then filtered or clarified in that it put protein. The Chinese have a kind of technology for clarification of the broth: they put inside patties stuffed with chopped boiled white chicken meat. After five minutes turn into broth, it becomes crystal clear and transparent. This broth is used for making soups, sauces and other dishes. Keep the cold for several days.
