Chinese Food - Recipe for Shark fins sauce


Shark fins sauce
Ingredients: 160 g of shark fins, 15 g lard, 10 ml sherry or vermouth, South starch, 5 g soy sauce, 1 onion, hot red pepper, salt, 5 g sugar.
Preparation: The fins are processed in a way already described. Then smothered in pan with some oil with soy sauce, alcohol and burnt sugar. Add salt. After 10 minutes add starch dissolved in water. The dish is allowed to simmer until thickened. Serve sprinkled with paprika, fry in oil.
