Noodles and Noodle Dishes
All types of noodles in China are boiled or steamed. The length of cooking is determined by the type of noodles, and the fact of what treatment will be subjected thereafter. The basic rule is that the noodles should not be cooked long enough to not become a sticky mass. It should be soft, but strong core. Noodles can be boiled in soup to cook the meat and vegetables.
