Pork bellies for the recipe for Su Dunpo
The proposed recipe is the famous Chinese poet who lived in an era of Sung dynasty.
Ingredients: 1.5 kg pork bellies, 0.500 l oil for fry, 20 ml sherry or vermouth, parsley 15 g, 15 g starch, 15 g soy sauce, sesame oil 10 ml, 10 ml vinegar 10 g sugar.
Preparation: belly of pork cut into squares of side 6 x 6 cm onion cut into small pieces, separately prepared a strong green tea.
The meat is boiled in 1.5 liter of water, then remove and rinse with warm water. Place in a saucepan. Add alcohol, soy sauce, sugar, onion, ginger, green tea and
the bulion. Allow to boil, then about 1 hour to stew over low heat under cover. The goal is to remain a little sauce. Pieces of onion is harvested and discarded.
Prepared in this way pork bellies retain their shape and have a particularly spicy flavor.
