Fish with mushrooms and bamboo tips
Ingredients: 125 g fish, 25 g bamboo tips, 15 g fat, 10 g dried mushrooms, 10 g soy sauce, 10 ml sherry or vermouth, 5 ml sesame oil, 1 onion, 1 tablespoon sugar, 10 g starch, salt , ginger, 200 ml broth.
Preparation: The fish is cleaned and washed, to make deep cuts on both sides. Cut in large pieces (one piece per serving). Fry in plenty of very hot oil.
In a separate pan heat the oil, poured inside the diced bamboo tips and pre-soaked in water and drained
mushrooms, fry up, and add soy sauce, alcohol, sesame oil, a little of the broth, add chopped onions, ginger, sugar and salt. Stir 1-2 times. Pour, pieces of fish. Cover the dish to the pot and stew on low heat.
The fish is served with the remaining broth fields. If it is not sufficiently compressed, it is added starch.
